Research Interest: Dr. Maha Alshehab is an Assistant Professor of Food Science at Kuwait University. She earned her Ph.D. in Food Science from the University of California, Davis. Her research is focused on the utilization of naturally present and biologically inspired structures for the production of highly functional and low-cost encapsulation systems for food applications. Dr. Maha is also interested in researching the cultural and language barriers in Food Sensory Science.
